My take on Sunday dinner

Growing up, my mom always made HUGE Sunday dinners. You know, the kind that take all day to cook and usually involve more than one course. I absolutely love the concept, but I very rarely have the time to cook for an entire day. My mom is probably one of the best cooks I've ever met...and I'm pretty sure I didn't inherit her cooking gene. I realize that it's taken her a lifetime to get as good at cooking as she is, but long recipes overwhelm and frustrate me. So I've developed a form of cheating that works very well for someone who doesn't like to slave over a stove all day.

Today I wasn't feeling well at all and definitely was not in the mood to get out of bed all day, much less cook dinner. After one of my many naps, I came up with an easy recipe that actually turned out to be really good! We are hopefully closing on a house some time this week and I'm very quickly realizing that I need to cook all of the random things I have left in the fridge and freezer. Here is what I came up with.

Stuffed Bell Peppers
Bell Peppers
2 nice sized bell peppers
Cajun sausage

1. Cut the top off of the bell peppers and remove the seeds from the inside
2. Roll the sausage into 2 balls and put them inside the cleaned bell peppers
3. Cook at 400 degrees for around 45 minutes in a pan with a little water at the bottom
(if you don't cook the sausage for long enough like I did, stick in the microwave for 2 minutes and you'll be good! haha)

Sauce
1. Get a can of my new favorite pasta sauce
2. Saute mushrooms, onions, and chopped bell pepper in a little butter (I use Move Over Butter because it's a little healthier than real butter)
3. Add the sauce








It is insanely quick and easy, and I was impressed with how it came out! Plus it looks like it took a lot of effort when it didn't. Enjoy!

  1. I was actually just working on a Sunday dinners post myself that I was going to put up later this week - funny! I LOVE stuffed peppers! I'll definitely have to try that recipe sometime!!

  2. I made an awesome sunday dinner tonight too! A healthy weight watchers recipe for shrimp scampi! i can't believe how good it came out, and how easy it was.. Lemme know if you want it!
